2 cups Simple Truth Organic® Vegetable Broth

1 cup lite canned coconut milk

2 tbsp. Simple Truth Organic® Tomato Paste

1 tbsp. Simple Truth Organic® Unsalted Butter, melted

1 tbsp. Simple Truth Organic® Curry Powder

1 tsp. Simple Truth Organic® Light Brown Sugar

1 tsp. fresh ginger, minced

½ tsp. salt

¼ tsp. Simple Truth Organic® Ground Saigon Cinnamon

½ cup Simple Truth Organic® Red Lentils

¼ cup Simple Truth Organic® Quinoa

2 cups cauliflower florets

½ cup diced onion

1 Simple Truth Organic® Carrot, chopped

2 garlic cloves, minced

  1. Pour vegetable broth and coconut milk into crockpot. Add tomato paste, butter, curry powder, brown sugar, ginger salt and cinnamon. Whisk until well combined.
  2. Rinse quinoa and lentils in a fine mesh sieve. Add to crockpot along with the cauliflower, onion, carrot and garlic. Stir to combine.
  3. Cover and cook on low for 7-8 hours, or until lentils are tender.
