Nothing beats coming home to a home-cooked dinner — especially if it’s this tasty recipe for organic chicken simmering with marinara sauce, broccoli, basil, penne pasta and ricotta cheese. The best part? It takes just 5 minutes to prepare and you’re out the door!

  1. Place the marinara sauce, chicken thighs and broccoli into a slow cooker. Turn to low or medium heat and let cook 6 to 8 hours.
  2. Right before you are ready to serve dinner, boil a pound of pasta. Drain the pasta and divide into 4 bowls.
  3. Remove the chicken from the slow cooker and shred using a fork; place over the pasta.
  4. Garnish with a spoonful of ricotta cheese and torn fresh basil.
  5. Serve and enjoy! Refrigerate any leftovers.

i was disappointed with this recipe. I used 3 boneless /skinless chicken breasts and it absorbed most of the sauce. The broccoli was overcooked (6 hours?) and the meal overall was very bland.

Melina, Try preparing the recipe as directed with chicken thighs. Thighs have more fat than breast and so they should not absorb as much of the sauce.

Melina,You cannot substitute skinless chx breasts for thighs and expect the same flavor profile. Breast meat is dense, lean and lacks any real flavor.

Some people have bad initial experiences with dark meat chx (gamy, under cooked). When stewed or braised, thighs and leg quarters are quite delicious. Don't let yourself miss out on these cuts...

Seems like if you done it all in crock pot pasta and rest it would come out with out being dry.
