Cranberry Chocolate Chia Cookies

  1. Preheat oven to 350F. Line a baking sheet with parchment paper or spray with olive oil spray.
  2. In a large bowl, combine almond meal, chia seeds and salt. Mix until well-combined and set aside.
  3. In a medium bowl, whisk together the agave, coconut oil, egg, and vanilla. Stir wet ingredients into dry ingredients until just combined.  Fold in cranberries and chocolate chips.
  4. With wet hands, roll cookies into small balls and place on baking sheet. 
  5. Bake for about 12 minutes. Cool cookies for five minutes on the baking sheet before carefully transferring them to a wire rack to cool completely.
