Pumpkin Banana Mini Muffins

  1. Preheat oven to 325F. Spray a mini muffin tin with canola oil spray and set aside.
  2. In a large bowl, combine mashed banana, pumpkin, maple syrup, coconut oil, egg and vanilla. Whisk until combined.
  3. In a medium bowl, stir together the almond meal, oats, cinnamon, nutmeg, ginger, baking soda and salt. Pour into wet ingredients and mix until just combined.
  4. Spoon batter into mini muffin tin.
  5. Bake for about 18-21 minutes, or until a knife inserted into middle of muffin comes out clean. Cool muffins for five minutes in tin before carefully transferring them to a wire rack to cool completely.
