Mango Coconut Quinoa Oatmeal

  1. In a medium pot, bring water and coconut milk to a boil. Add oats, quinoa, chia seeds and salt, stirring to combine.
  2. Reduce heat to medium and simmer, uncovered, for about 25 minutes, stirring frequently. 
  3. Add mango, coconut, honey and vanilla. Reduce heat to low and continue to cook for about 5-10 minutes, or until oats have reached preferred consistently. 
  4. Serve with honey to taste.
