Blueberry Pie Steel-Cut Oatmeal

  1. In a medium pot, bring water and soy milk to a boil. Add oats, flaxseed and salt, stirring to combine.
  2. Reduce heat to medium and simmer, uncovered, for about 25 minutes, stirring frequently. 
  3. Add blueberries, maple syrup and vanilla. Reduce heat to low and continue to cook for 10-15 minutes, or until oats have reached preferred consistently. 
  4. Serve with maple syrup to taste.
