Simple Truth Organic™ Extra Virgin Olive Oil Spray

1 cup Simple Truth Organic™ 2% Milk

2 tsp. lemon juice (or apple cider vinegar)

½ cup Simple Truth Organic™ Unbleached All-Purpose Flour

½ cup white whole-wheat flour

1 cup cornmeal

1 tbsp. Simple Truth Organic™ sugar

2 tsp. baking powder

½ tsp. baking soda

1 tsp. salt

½ tsp. garlic powder

½ cup Simple Truth Organic™ Sweet Corn, drained

3 tbsp.  Simple Truth Organic™ Unsalted Butter, melted

1 Simple Truth Organic™ Egg

1 cup shredded cheddar cheese

¼ cup chopped onion

1-12oz package Simple Truth Organic™ Frozen Broccoli, steamed and chopped

  1. Preheat oven to 350F. Spray a 12-cup muffin tin liberally with olive oil spray.
  2. In a medium bowl or liquid measuring cup, mix together milk and apple cider vinegar and set aside to curdle.
  3. In a large bowl, stir together the flours, cornmeal, baking powder, baking soda, salt and garlic powder. Stir in corn.
  4. Add melted butter and egg to milk mixture. Whisk to combine.
  5. Add wet ingredients to dry ingredients and stir until just barely combined. Fold in onion, chopped broccoli and cheese.
  6. Spoon batter evenly into greased muffin cups. Bake for about 27-30 minutes, or until a knife inserted into the center of the muffin comes out clean.
  7. Allow muffins to cool in muffin tin for 5 minutes, and then transfer them to a cooling rack to cool completely.
