Vegetarian Eggs Benedict


4 Simple Truth Frozen Meatless Breakfast Patties

4 large Simple Truth eggs, poached

2 English Muffins, split and toasted

½  cup Simple Truth Organic Plain Yogurt

1 tsp prepared mustard


  1.  Prepare the 4 breakfast Patties according to package directions.
  2. In a small saucepan mix the yogurt and mustard.  Using low setting, cook until thoroughly heated.
  3. While sauce is heating and patties are cooking, poach the eggs and toast the muffins.
  4. To serve, place toasted muffin half on plate, top with meatless patty,  poached egg and top with  about 2 tablespoons of sauce.
  5. Refrigerate any leftovers.
