The Magic of the Marinade

Nothing puts the finishing touches on a great cut of meat like a tasty marinade. It infuses your dish with a dash of new flavor and it often results in a more tender piece of meat. But what marinades go best with what kinds of meat? Here’s a helpful guide to some of our favorites. Keep in mind: Marinate meat in a sealable container, with the marinade poured over the top. Then refrigerate overnight before grilling.

  • Chicken – The savory, white meat of chicken lends itself well to lighter marinades. Lemon-based marinades, teriyaki and even ginger ale add a burst of flavor and smell great cooking on the grill.
  • Use the juice of three large lemons, fresh herbs of your choice, minced garlic cloves and ¼ cup EVOO.
  • Beef – The right marinade can depend a great deal on the particular cut of beef you’re preparing, but for the most part, darker, heavier, fuller-bodied marinades work well. Red wines, dark colas and even coffee pack richer flavors into your favorite beef cuts.
  • Use 1 cup of extra strong brewed coffee, ½ cup water, ¼ cup EVOO, ¼ balsamic vinegar, minced garlic, and spices/herbs of your choosing.
  • Fish – Again, different fish will benefit from different marinades but light, refreshing flavors are the key. White wines, citrus and honey bring out the best qualities in your fish and pair perfectly with the flaky meat.
  • Use ¼ cup honey, juice of 3 limes, and minced jalapenos to taste.
